Colorful Veggie Wrap

My Normal work week lunch includes leftovers from dinner the night before and salads. Although I thoroughly enjoy my salads at work, I was getting a little tired of them. One day while I was browsing the web, this article popped up and as I viewed the slides of healthy, no-cook recipes, I got some ideas for putting a spin on a “salad” like lunch. This Rainbow Veggie Wrap inspired my all veggie wrap. I picked up the most colorful vegetables I could find in the store and proceeded to build my wrap.

I started with a whole wheat tortilla and spread some goat cheese in the middle. Then, I layered all of the vegetables in a line down the center. I included cucumber, tomato, red cabbage, carrots, peppers, red onion and kale. I stacked all of the veggies neatly in the middle to make it easier to roll. I drizzled a tablespoon of extra virgin olive oil over the vegetables and then sprinkled with fresh cracked pepper and salt. I rolled the wrap in plastic wrap to hold it all neatly together. I’m sure this would be excellent with a little balsamic glaze too, but I kept it really simple!

This lunch tasted so fresh and delicious and was SO easy to make. I definitely recommend you try it if you’re looking for a healthy alternative to a salad.
