I decided to take my shot at making my favorite ice cream topping: salted caramel. For some reason the idea of making caramel seemed really hard, in my head. In reality, it wasn’t too bad! Here’s the ingredients:
1 cup of sugar
1/2 a cup of half and half ( or any cream)
6 tablespoons of salted butter
1 teaspoon of salt (I used the pink Himalayan salt)
This process involves constant stirring so get your arms ready!
To start out put a cup of sugar in a sauce pan on medium heat and start stirring. Stir this constantly with a rubber spatula until it turns to a light brown liquid. The sugar will go through a clumpy stage and then it will start to brown and melt.
Once you have the liquified sugar, add the 6 tablespoons of butter, one tablespoon at a time, but fairly quickly. Be careful because the butter will cause some bubbling.
When the butter is fully melted add in the cream very slowly and stir with a whisk. Again this will create a lot of bubbling so be careful because the sugar is VERY hot. Once the cream is added, let the caramel come to a rolling boil for one minute. You don’t have to stir through this process. After the minute is up, take it off the heat and add your salt and whisk in.
I let my caramel cool for a little and then transferred it to a jar which I had warmed up with a little water. I didn’t want the glass to crack. After about an hour I used it on my ice cream and it was soooo good!! Nothing beats salty and sweet 🙂 I stored the left over in the fridge for future sundaes!
