For our father’s day BBQ I decided to attempt grilled corn. We’re corn boilers in our family so grilled corn is out of the box for us. I searched online for recipes, tips and directions on the best way to grill corn and here’s what I came up with.
We started with 10 ears of corn which I meticulously unpeeled, removed the silk from, and then put the outer husk back on. Yes, that part was very annoying, but I did it anyway because apparently the husk protects the corn from getting burned, which was true because the bare pieces exposed to the grill did get a little charred. So after this process of peeling and replacing the husk, I soaked the corn in cold water for about 10 minutes. This is supposed to help steam the corn once it is on the grill.
After soaking in water, I placed the corn on a medium heat grill and proceeded to turn the corn every 5 minutes for about 35 min.
Once I thought the kernels looked like they were cooked through and felt tender to touch, I took them off the grill and removed the husks with my oven mitted hands. This is the part that I didn’t like about grilling corn. I was not a fan of the charcoaled husks flying everywhere and making a mess, or peeling the corn for everyone. Other than that though, the flavor of the corn was excellent and everyone seemed to enjoy it.
While I was running back and forth turning the corn on the grill I whipped up some garlic parmesan butter to brush onto the grilled corn. I used:
- 1 stick of salted butter
- 5 whole garlic cloves
- Fresh cracked pepper
- A sprinkle of parsley
- 1 ½ tablespoons of parmesan cheese
Melt the butter with the garlic cloves over very low heat. I let the butter bubble up for about 30 seconds, I didn’t want the garlic to burn. As soon as everything was melted I added the pepper, parsley and cheese and let it sit on the stove until we were ready to eat.
I served the garlic butter on the table next to the corn with a brush for people to apply the mixture to the corn. The flavored butter and grilled corn turned out to be a big hit with everyone! I’m glad I ended up stepping out of the box and trying it. 😉
